Černý čaj použitý pro tuto Kombuchu pochází od Postcard teas, kteří eticky získávají své čaje z farem o rozloze nejvýše 15 akrů. Pěstuje se bez pesticidů a agrochemikálií v jižní indické provincii Kerala a zpracovává ho Sahyadri Tea Consortium, družstvo 164 rodinných farem, které praktikují polykulturu a ekologické zemědělství.

Čaj se pak fermentuje s třtinovým cukrem, pramenitou vodou a živým SCOBY, poté se dochucuje pro druhou fermentaci za studena lisovaným organickým zázvorem a kurkumou. Je syrový a nepasterizovaný.
